Twenty guests. Two communal tables. A menu drawn from everything behind a single coffee — origin, fermentation, fruit, aroma, bitterness, sweetness and roast. Not espresso in every course. The ideas, not the ingredient.

All commercial terms — venue fee, revenue split, pilot economics, beverage licensing arrangements — are deliberately absent from this page and must stay that way.
The Idea
Each edition takes one coffee — a producer, an origin, a processing method — and builds an entire menu from what that coffee actually tastes of. A coffee might express raspberry, red apple, stone fruit, black tea, jasmine, chocolate, spice, or tropical fermentation. Those become the creative brief for the kitchen.
The editions are numbered and continuous: ORIGIN 001, 002, 003 — and eventually past geography altogether, into Fermentation, Fire, Harvest.

The Room
The room is surrounded by the working language of coffee — the roaster, the stainless, the glass. We do not disguise any of it. At night the overhead lights go off, the table lighting comes up warm, candles are lit, the roaster is lit like sculpture, and the room becomes something else entirely.
Two long communal tables run through the centre. Real napkins, proper stemware, an active chef station in view. It should feel like being invited to an exceptional dinner party rather than processed through a tasting menu.
The Evening
You check in out front rather than walking straight to the table. Music is on. A welcome drink built around the featured origin is in your hand before you sit down.
At the seating time the doors open and you are brought through into the dining room. It is a deliberately different room at night than the one you walked past.
An opening bite and five courses across two communal tables. Social and energetic rather than hushed. The chef talks through some of it without turning the night into a lecture.
Not "would anyone like coffee?" — the final coffee is a course. It is introduced, explained, and served with one last small sweet.

An illustration, not a fixed menu — every edition is rebuilt around its coffee. Dietary requirements are handled with notice.
To Drink
Wine, chosen to sit with food rather than to impress on paper. Coffee cocktails in refreshing, food-friendly directions. And a zero-proof programme built with the same care as the wine list — cascara, tea, verjus, fruit ferments, herbs, clarified juices, spice and carbonation. Nobody drinking without alcohol should feel handed a lesser version of the night.
